Somewhere along the line, our idea of futuristic space-age culinary options got off track. Thankfully, here in 2010, we aren't all surviving off of food in pill form, but other good (or at least more delicious) ideas still have not come to fruition. We may not yet have the Black & Decker Hydrator from "Back to the Future," or the liquefied meal (including fish!) served on the moon shuttle in "2001: A Space Odyssey," but at least we have sous vide cooking.

Innovative cooking methods and innovative food storage solutions may not seem like they belong together, but when it comes to vacuum sealing, the future is here. The Caso VC200 Vacuum Food Sealer is a simple 5-pound machine that serves a dual purpose. When used in conjunction with an immersion circulator, the vacuum sealer creates airtight packages ready to be submerged. As a side benefit, the airtight packages make excellent storage for pouches for the freezer.

Convenience is key in this necessary accessory for sous vide cooking. The machine has the option of using precut bags or an open-ended roll for creating a sealed pouch of any size. The vacuum sealer uses one-touch button operation for sealing bags automatically, and there is a manual override for use when sealing delicate foods--such as everybody's favorite future movie-food, "Soylent Green."
