Low-ISO-sensitivity JPEG
The Canon EOS Rebel T5i delivers clean JPEGs up through ISO 800.
Mid- to high-ISO-sensitivity JPEG
Above ISO 800, artifacts can be quite noticeable, with the occasional hot pixel, but you can probably get away with ISO 3200 for some scenes.
ISO 100 JPEG
The T5i renders a reasonable level of detail for its class, with no obvious oversharpening or unexpected artifacts.

ISO 400 JPEG
The T5i produces very good JPEGs at ISO 400.

ISO 800 JPEG
ISO 800 is the highest I'd go with JPEG, although here you can see some color noise (the fringing is a lens issue).

ISO 1600 JPEG
Generally, Canon isn't as aggressive on the color noise as I'd like, but processing raw can make it a little better. The processing seems intelligent when it comes to treating well-illuminated areas differently than underlit ones.

ISO 3200 JPEG
While the edges look better than I expected at ISO 3200, you can see the color noise in the dark areas.
(1/60 sec, f3.5, AWB, spot metering, ISO 3200, Sigma 35mm f1.4 lens)
(1/60 sec, f3.5, AWB, spot metering, ISO 3200, Sigma 35mm f1.4 lens)
ISO 6400 JPEG
Canon does manange to preserve a reasonable overall tonal quality as high as ISO 6400, and JPEG images look fine scaled down.

ISO 6400 raw vs. JPEG
ISO 6400 looks okay if you're willing to exchange color noise for graininess.

(1/80 sec, f2, AWB, spot metering, ISO 6400, Sigma 35mm f1.4 lens)
ISO 12800 JPEG
While it's not great for viewing at actual size, ISO 12800 is fine for use scaled down about half-size.
(1/100 sec, f4, AWB, spot metering, ISO 6400, Sigma 35mm f1.4 lens)

Color
Canon's default colors still deliver occasionally surreal-looking saturation.
Picture Styles
While there are still some hue shifts in the default Auto Picture Style, they're a little less egregious than previously.
(1/40 sec, f4, AWB, spot metering, ISO 100, 18-55mm STM lens at 18mm)
(1/40 sec, f4, AWB, spot metering, ISO 100, 18-55mm STM lens at 18mm)
18-55mm STM lens bokeh
The 18-55mm STM lens has pretty nice out-of-focus highlights for a kit lens.
(1/100 sec, f7.1, AWB, spot metering, ISO 100, 18-55mm STM lens at 55mm)
