Sous-vide cooking has been getting a lot of attention recently and for good reason: cooking food in a water bath at an exact and consistent temperature provides unique results. As the method keeps gaining popularity, appliances and gadgets are cropping up designed to make the process accessible and affordable.
The Nomiku combines a heat source with an immersion circulator. Many other consumer appliances do not integrate an immersion circulator into their designs. The capability to circulate water (in this case at 10 L/min) allows for more consistent results. Unfortunately, the cost of integrating an immersion circulator into these devices increases the price until it is prohibitively high. Nomiku solves this problem by eliminating the need for a proprietary cooking vessel; most any pot or pan you already have will do.
The Nomiku clips on to the side of a pot or pan and is controlled by the simple-to-use knob at the top. The business end of the device stays submerged in the water and delivers 750 watts of heat output. According to the creators, the temperature is accurate to within 0.2 degree Celsius and maintains a stable temperature to 0.1 degree Celsius.
The sous-vide technique has been around for a while, but refinements keep pushing it forward. Certainly in the case of the Nomiku, the capability to use it with existing kitchen accessories is a positive, not only because it is a space-saver, but it makes it affordable too.
