My native resolution is 2560 x 1440p @ 60Hz (10-bit color) The Nvidia control panel allows me to make the refresh rate higher and when tested 62 HZ works fine, should I do this?

Overclocking the displays. This is hit and miss and may or may not work. I get along fine with 60Hz settings and can't tell much difference when the change is in the single digit percent points.

Other than run the monitor faster than what it was designed for I doubt you will see anything.

If you can't see a difference set it back to 60.
