We can always bump RAM, change to SSD but the GPU is forever. All gaming laptops are hot things. Done.

Get a laptop cooling pad.

GS60 is thin that makes its thermal throttling system more important, thats why it needs two fan. (I believe cooling performance is one of the factor that decides life time of a laptop)
GE60 has better CPU & GPU which has better performance for games.But GE60 weights 2.6 and GS70 weights 1.96, thats about a bottle of water. Imagine there's a additional 600g in your backpack.
I would go for GS60, its thinner, lighter & prettier and has two fans and also fulfill most of games needs.
If you have no budget concern, consider GS60 with 5th gen i7 CPU & 960 GPU, combining both cons between these two choices.

the GS60 would definitely be good for you if you travel. its quite light and will run minecraft and skyrim (on moderate settings). i dont have too much experience with adobe programs myself, but the i7 should have no problem with them.

If money is no limit, I would suggest to pick the GT72 Dominator Pro due to G-SYNC is an awesome feature to have for best gaming. I got the one and it works pretty well.
