What to back up using Win 10

I installed a 500 GB SSD recently and I want to us the old internal 1TB for backup and restore but I'm not about something .

Since Windows 10 is so easy to reload with or without saving files, should I create a System Image or just back up all of my files, folders and programs or all of the above ?

I create a system image for full system backup, plus I make copies of important files and documents that I save to removable drives such as DVD and flash drive. I just don't trust one backup.
