I recently asked the same questions and was told that "Understanding Exposure" by Brian Peterson was good. I googled it and it has some great reviews.

"Understanding Exposure" is a good book.
When you understand how exposure is controlled by the camera and by the photographer, you will understand why a camera needs so many adjustments and how to use the adjustments to improve your photographic skills. Exposure is the heart of the camera.

A common question on this forum is people wanting to know why their camera can not take good pictures in low light. When you understand exposure you will know why and what to do to turn a perceived problem into a good photograph.

The link I provided is to short courses that covers just about every aspect of photography you can think of. They cover the subject but are not in-depth. Sometimes that is all you really need. Think of it as a reference book.
