I was browsing through Task Manager and I saw 2 unknown.exe processes and a NX.exe while I was running recover my files to try to recover my data from portable hard drive.
they were using 40% of my processor and my cursor was also scrambled.

Nobody can comment, I'm afraid, on something that's unknown. And if you don't tell the details of that NX.exe (folder, details in properties and if it is related tot the recovery you run) nobody can comment on that either.

Antimalware Bytes has discovered the unknown.exe as bitcoin miner
and NX.exe is still there

I worry when I see mangled names like Antimalware Bytes

There is a well known MalwareBytes. But today you might find a (bad?) clone called something similar.

Be sure of those product titles as some are rogue and are malware.

If anti-malware/anti-virus programs don't remove it, and you can't delete it from Windows, the usual trick is to boot to a Linux disk or stick to delete it.

Ypu should be able to remove it

if you boot into safe mode. Try doing a Anti Malwarebytes and a virus scan in a safe boot
