UAP‑AC‑M‑PRO clients drop connection almost immediately

Recently set up a ubiquiti Mesh Pro and am experincing issues. The idea for this addition was to provide a network connection at a location rougly 350-400 feet away from the main building. After up the access point on the roof (2 story building) pointed towards desired location I started testing. I am using a MacBook pro (2015), an Asus laptop and a iPhone 7plus for testing the signal strength etc. The nearly exact thing happens everytime, first I connect and there are no issues I can load websites run speed tests etc. Then 20-50 seconds later the signal is dropped and I have to reconnect manually before I get a connection again. Mind you the signal strength is shown as full bars on the MacBook and full or close to it on the other devices. Is it possible the AP is too high up? Or the devices are having trouble sending the packets back that far?

Not at all, I have yet to reach out to them. They have responded to the question I sent them before within 24hrs. Just sounding multiple people to get ideas on how to fix.

Any distance over 100 meters or 300 feet

Is going to get iffy on 2.4GHz WiFi. While a directional may help, you may have to get a paired solution at some other frequency to avoid interference. Ubiquiti and their sellers usually consult on the issues. Here I know at that distance it's probably going to drop.
