Transfer DVD content to iPod Video?

I have a new iPod Video, the 60 Gig with the enlarged screen. It's awesome! I've downloaded one video from iTunes, which works beautifully. However, we have countless DVDs I'd like to capture to my iPod for those occasions where I'm caught with nothing to do, like doctors' waiting rooms.

Can anyone break down their successful experience for me? I've followed the specs on other sites, but nothing is acceptable to my iPod, even though the iTunes in my Mac G5 plays them just fine.
