Or not. I don't know if poultry farming is all that eco-friendly.

Actually, my impression is that agriculture in general is one of the largest sources of 'greenhouse gases'. It's not just cows. Tilling the soil results in loss of carbon in soil (it goes into the atmosphere) and on NPR this morning I heard a radio story claiming that until sometime in the 20th century this loss from tilling was the single largest man-made contributor to greenhouse gases.
