Looking over www.amd.com the maximum chip temperature would be at http://www.amd.com/us-en/assets/content_type/DownloadableAssets/Processor_recognition.pdf
would be from 70 to 90 degrees C. Use that datasheet to find which model you have and what is the maximum temperature of the chip. This is NOT the temperature that your BIOS reports since the motherboard can't directly measure the chip die temperature.
My rule-of-thumb is to be somewhere mid-way from chip maximum to ambient.
I'll use 30C as a room temp and 90C as the CPU maximum. The midpoint would be 60C so shutdown would be from that to another 10C.
