Couple of ways to do this,

create yourself an album in iTunes that only contains the pictures that you want on the iPhone, configure iTunes to only sync albums of your choice, then sync.
The extra pictures will be removed and only those pictures in the album will be left.
OR
Open the Photos app on the iPhone and go to the Moments screen. You should see the word Select at the top right of the screen. Hit it. The word Select will now appear next to each set of Moments. Tap the Select that is next to the group you want to remove and then hit the Trash can icon at the bottom right of the screen.
Follow the instructions and you are done

If you can access the original files of the pictures, you can:
Step 1. On your computer, open the folders you sync photos from > Remove the originals of the pictures you want to delete.
Step 2. Open iTunes > Go to your iOS device > Sync photos to your iPhone, iPad or iPod touch again.

If you cannot access the original files, you can:
Step 1. Create a folder on your computer > Add one photo to the new folder.
Step 2. Open iTunes > Go to your iPhone > Photos.
Step 3. Choose the folder created at 1st step to sync photos from > Apply.
Step 4. Uncheck "Sync Photos From" > Apply Again > Sync iPhone.
