Striped Raid Drives or 1 Fast Drive

If you were building a new PC for video editing and photo manipulations, would you include one 10,000 RPM SATA drive or a pair of striped 7200 RPM drives? I am planning on including a dedicated storage drive but can't find info on how to configure the system drive.
