Snow Leopard / trackpad frustration

I'm running SL on both a Pro and a MacBook. In both cases, when I try to click on a file that I simply want to drag/drop into a folder, most of the time I get a dialog box of options, none of which is what I want to do.

Also, suddenly all my desktop folders enlarge, and I have to go to View Options to shrink them back down. I don't know what causes them to do this. I do seem to have a very sensitive trackpad on both computers, because even hovering over it sometimes causes a change of screen, deleting an email, etc.
