Setting up multiple versions of my printer in WIN 7

I like to create multiple versions of my Epson Stylus Photo R380, so that I can print B&W draft, color draft, higher quality color, or best quality color. This allows me to choose the printer with the appropriate settings for routine printing, printing greeting cards, or printing color photos, rather than having to constantly change settings on one printer. I was able to do this in WIN XP, WIN 98, and WIN 95 (I think). I did this by assigning my default printer to USB001, and all the other printers to USB002. WIN 7 doesn't appear to have a USB002 port. Can anyone tell me how I can accomplish this task in WIN 7 (Home Premium) on a Dell XPS 400, with a 2.80 GHz Pentium D, 2 GB of RAM, and a 600 GB hard drive.
