Is there a way to see the date of the last time a pdf document was printed?

Just try: print it and see if the modification date of the file is changed. If not, the file isn't modified so won't contain the printing date and time.

That brings us to the question: does your OS offer a log of files printed? Windows doesn't. Most likely your printer driver isn't configured (doesn't even have the option) to do it. But if you happened to print to a printer in your office network, they might have logged it.

Thanks for the reply. It looks like I'm out of luck unless there are any other ideas. It was printed at home from a Vista machine. Does anyone know if there is a way to look up the printing history on Vista going months/years back? Thanks
