Scans saved as PDF have "haze"?

I have been scanning documents for the last 2 years with an Epson Artisan 810. I always used the "office mode" in Epson scan and saved the files as pdf. This always worked smoothly and provided an easy workflow. Then around July12th i noticed the pdf copies had a "haze"? I had probably done 500+ scans in the week prior to this. I tried uninstalling/reinstalling drivers and Adobe, when i contacted Epson tech support they had me uninstall/reinstall drivers, i visited an authorized repairman who confirmed the differences in the scans but found no physical problems with the scanner, i received a replacement unit, tried scanning with a different computer, purchased a new Artisan 835, BUT still have the "haze"?
I've started using the "unsharp mask" and "text enhancement" adjustments which produce a better quality scan but still not as clear (or true to color) as the previous scans?
I've also noticed scans saved as jpeg or TIF are very clear and true to any colors?

I could not tell if the 500 scans have the same haze so you should clear that up.

Also, you ask for it to be true to color but I didn't read what you use to control color in your system. Not many do today and HOPE FOR THE BEST. If you need color control then you need color control.

Please google up a PANTONE HUEY for an example.

My question is this one. What color control system are you using? (Hope or a system?)

Thank you for your time and sorry for any ambiguity. The "500+" scans did not have the "haze". This information was just to point out my process had not changed for the last 2 yrs and a large number of scans were done prior to this change.
The "true to color" comment just refers to one of the changes i noticed (besides the text clarity). Some of the documents contain color (not photos) and after the "haze" appeared i also noticed a change in color between prior scans and the new ones. (these samples were verified by an Epson repairman).
As for color control, i found the default settings in the "office mode" of Epson scan to be most effective for my "document" scans (photos are handled differently).

I've found such to cause no end of problems. Since the problem follows to other machines it may be time to try someone else's scanner on another persons machine.

Nothing in your post tells what changed and it's not a common issue so all that is left is to SYSTEM RESTORE to when it worked. It could be a Windows Update but without knowing which ones are installed you can't be sure.

I can make one offer. Take a good scan and a bad scan and put them up on some file share site for members to see the haze before and after.

Thank you very much Bob. I also have the feeling some "update" caused a change (either Windows or maybe Adobe?).
I didn't think about the "system restore" and will give that a try.
