What changes (from the following ones) will Galaxy Note have, once I upgrade it to Ice Cream Sandwich?

That was good piece of info about Samsung Galaxy Note. Android 2.3 Gingerbread which is going to be used in Galaxy Note will not as a whole support the S Pen. ICS will break about this change i believe.

according to recent galaxy S2 upgrade

I think it will be similar to recent Galaxy S2 upgrade.
You already mentioned the most of new functions but another significant improvement is wi-fi and web browsing speed. After people got upgrade their os to ICS, the most of users found faster browsing and internet speed.
Samsung said there will be ICS update for galaxy note in first quarter but it seems it is getting delayed.

Upgrading to Ice Cream sandwich will be accompanied by its new Premium Suite software.
The Premium Suite upgrade will include "extra multimedia features and a range of new S Pen optimized applications.
