restoring Windows XP

For some reason my computer will not let me restore to a previous date. I downloaded IE-7 and I don't like it, but I read on this site that I can go back to IE-6 by uninstalling IE-7. Why can't I do a restore to say last week? It looks like it is restoring, but then stops. Please help.
