It's not sure at all that the delete of the trial version will delete the data made with it also. Generally, they stay, although I'm not sure this is the case with this beta.
However, they surely are on your backup. And I'm rather sure the trial version can read the data from the beta version. So even if they disappear during the process, you should still be able to restore them from the backup.
If you don't have a backup of a few months of data, it's time to make one first.

Does anyone know how to rescue items (email msgs) from an expired Beta version of Office 2007? We used Office 2007 Beta 2 for several months, failed to save items in an older Office format before the Beta version expired, and now when I try to install a trial version of the new Off 2007 it wants me to delete the beta version before it installs - the trouble is, of course, that the email msgs I would like to have access to will be lost if I delete the beta version.
Doea anyone know how to get around this?
