The software I use is Final Vinyl, which came with the iMic, but is also available for free online.
I have a Canopus Analog-to-Digital converter box that I've used to convert the RCA Video-Out from VCR to Firewire-In on my Mac. So instead of a VCR, I connect the RCA-Out from a turntable to the same Canopus and I then use QuickTime Pro. QT Pro has a pull-down menu function called "New Audio Recording". It's a little clunky, and it doesn't have the finess that Audacity has, but for simple Record and Save, it works and it saves in AIFF which is raw audio data. I can then take each saved audio file into Audacity to trim,equalize, etc. for finishing. So you ask, why not just use Audacity to record? Just because QT Pro is a quicker, simpler method to get the files recorded. For me, anyways.
