Answer
It's very simple.

1. A video signal to your PC.
2. A device to digitize and software to do the recording.

At no time do you record from a TV. No TV I know outputs a video signal.

Recording from TV

Sky boxes all output a video signal in the UK so you can record to a DVD recorder. I'd like to know how to interface this with a PC so as to be able record direct to a hard drive
