Didn't they cover such in the Windows Server classes and certs?
Also, you spec'd it all out so how is there any question here? That is, you just set it up and go.
As to the RAID 10 question, your RAID controller makes all the difference. I'd get the usual Adaptec and set it so I can swap/add drives as need be. otherwise I'm setting myself up for a failure.
The really big second issue is how you deal with the disaster plan. Better than half the time the company makes this sort of server then has no plan for when the server goes missing, down or melts down.

Which would be a better setup??
1 Large RAID 10 w/ 10 1.2TB drives and partition to 5 volumes.
OR
1st RAID 10 w/ 4 x 1.2TB drives (split to 3 partitions - OS, Logs1 & Logs2) and 2nd RAID10 w/ 6 x 1.2TB drives (split to 2 partitions for data)
