Why not try both and use the one you find best?

I am building a new computer (I am a photographer so I mostly use the Adobe CS 4 suite, watch movies, and browse the internet. I really don't know much about what I am doing, but it is fun.
I have two graphics cards. The first one is a sapphire hd 5670 1gb gddr5 and the 2nd one is a EVGA 01G-P3-N959-TR GeForce 9500 GT Video Card - 1GB DDR2. I am guessing that the sapphire is better, but now sure. Any advice?
So far I have an Ultra 1050 CPS, i3 2100 3.1, Cooler Master RC-942-KKN1 HAF X ATX Full Tower, Asus Xonar DX PCIe 7.1 Sound Card, ASUS P8P67 Pro B3 Intel P67 Motherboard, Hitachi 2TB Serial ATA, WD 2TB Caviar Hard Drives.
I am working on a CPU fan, Hard-drive fans, Blue Ray Drives, etc. Any thoughts on what I am missing/need and which graphics card is the best would help me out.
