Programs in "Start" - all programs.

I'm running Windows XP Prof, SP2, and have been installing a lot of small (and big) programs on my computer. Everything works fine - but, very soon my screen is becoming too small when I open the "Start- All Programs", i.e. there are too many entries in that list.
Is there any possibility, and how, to create for example, some folders in that list where I put similar files in. This would make the list smaller, e.g. a folder for Microsoft programs, a folder for games, etc.
Or is there any other way around this problem.
