PLEASE HELP! Newbie accidentally checked "convert to 128"!

Hope someone out there can help me!
I am a Newbie Grandma, with Windows Vista, and an itouch.
<div>Without learning FIRST, before I did something, I accidentally checkmarked
"convert higher bit rate songs to 128 kbps AAC".
I un-checked it, and hit apply, but now my itunes won't stop it, and I have my itouch plugged into my laptop, while this is going on, and, oh dear,
what have I done?
</div>Now, I have just read, that by doing this, my music will sound awful, and have a "whooshy" sound now!
How do I "undo" this mess?
I really value the quality of my music.
So, PLEASE, someone, help me?

Go back into iTunes

and make sure the check mark is out of that box.
then, in Preferences, under General, hit the Advanced button.
Make sure you have "import using AAC Encoder"
Click the settings and use iTunes Plus.

Hi! Thank you so much! I followed your advice!
BUT, what do I do about the music library that was earlier converted?
Does it somehow revert back to what it should have been, before I foolishly hit that checkmark?

Thanks for the reassurance! Most of my music is from my own CD's, and some songs that one of my daughters downloaded for me, from another site, other than itunes.
So, I HOPE it all gets back to sounding like it should, especially on my itouch.
