Isn't Word supposed to be the default and preferred editor? This isn't a fix, it's a work around...
If you read the KB articles I often find there are more workarounds than fixes. And an occasional "don't do that."
Anyhow, if this stops the problem it will lead to me suggest other reasons why this broke.

I found what the problem was.
A .jpg I pasted from a web page to the draft email was trying to update when I closed the email. Since it couldn't reach the Web page before the timeout, it would crash Outlook and not save changes to the draft.
I created a new draft without the .jpg and it saves properly while still using Word as an editor.
I tried a few other draft emails and they all save properly.

We need to be cautious when inserting images from the web. Some of these images can be carefully crafted to include malware, or to include code that attempts to connect to the internet to download malware.
That's why I always save any images to my hard drive first, then scan it with my anti-virus, and only then if it is clear, insert it into an email from that saved copy.
