Which is better Nikon or Canon.

Nikon owners will say Nikon.
Canon owners will say Canon.

Those two camera models are equivalent.
Either one is the best choice of the two.
Get the one that feels best in your hands.

Before choosing a lens just for portraits you should use the kit lens.
It may be all you need.

I find that it's more about the setup.

That is, care in lighting and setup seems to matter more than the camera. As to the lens the stock kit lens works well for most. Start with that and work more on your lighting and setup.
