New guy needs help

I just got my first tivo with a DVD-r recoder built in to it. I have it all set up and the servise to. Everything seem to be ok. Now here is my question. I have it set up to ware I can recod one show and whatch anther but I can only get local channals not HBO and so on wile I am recoding them on my cable box. Now I do no how to hook up it to ware I can whatch one show and recod a show but now be aboul to whatch any channal I want to.
The quiestion is though is this going to hert the tivo by channing channals on my cable box with the cable boxes remote. I was told by the Tivo people not to do this or I would mess up some of the Tivo info in the Tivo. Is this true. Also you know when you recoded a show on a DVD on a low setting and you whatch it how grany it looks. I am having this problom with live tv and I am not even recoding anything. I have tryed all of the video settings. I have tryed all types of video wireing. Now I am not saying it bad but it is Digtal cable and it did not look this way until I hooked up my Tivo to my tv. Now I do have to have my tv put to a video channal like video 1 or video 2 and so on. How is the best way to get the best video pictuer on my tv when I am looking at tv. Thanks
