its a 2000 network.. missed that part off original post, sorry!
Users on my network can alter settings for the network printers. I.E. change paper size etc. This needs to be restricted.. Any ideas?

Since I see that I can set the paper size in Word, and many other applications, you would want to tackle each application in turn.
Many people program LOG ON SCRIPTS to do just this.
Let me be clear. I will not provide such scripts, but only will note such are written by a competent IT staffer and they might have the nice book titled "Windows 2000 Server Resource Kit."
