Slice eggplant in 1/4 to 1/2 inch slices, soak in cold salt water to get rid of the bitterness in skin.10 minutes.
First dip slices in flour then in egg and water mix then in bread crumbs, Fry until golden brown.
Make first layer in baking pan cover with marinara sauce, I sometimes use a sauce ready made:) Put parmesan, mozzarella and romano cheese shredded on each slice, then do second layer! End with cheese as final layer bake about 35 minutes at 350.

Burry seed in dirt. Add water.

or

Drench in egg. Dredge in non-self-rising flour, salt n' whatever. Fry in butter til golden.

Works fer green maters too.

an old cook's trick, Put the flour on first and the egg will hold to the surface, then redip in flour or bread crumbs, you get a crispier breading:)

However, I like eggplant sliced thin, fried in butter and put in a grilled-cheese sandwich.

You can toast the bread in the toaster, nuke the colby and pour in on. A little black pepper, please. YUMMY YUM YUM!
