Need advice on gmail trash and spam

why is my spam and trash deleting itself and never there? I want to make sure nothing goes there that could be important and it is always empty.

It's the default for Gmail and I don't know of a way to change it. It's not in the normal settings section.

Here, it just make sure I move important items to another folder, such as something like a "Saved Items" folder.

By design, gmail deletes an email message in the Trash folder and the folder for junk mail after 30 days. However, you could use an email reader like Thunderbird to put deleted emails in the Local Folder, Trash. As for messages in the folder for junk mail, regular checking for valid emails, is best to do. This way, emails in the, Spam folder, that are not spam can be moved to the Inbox.
