MS Publisher 360 - Unattended printing

Hi there,
I need to print 80 x 22 page booklets that I would like to print on 8.5 x 11 paper. The booklet will be folded / stapled down the middle.
What settings do I need in order to be able to "print and forget", such that I can go away until the first side has finished printing, come back whenever, flip the printed sheets over, reload them in the printer and then go away again until the booklet is finished printing?
Ideally I would like to load enough paper to print, say, 10 booklets at a time, and go out to do other stuff while my Epson 3800 is doing its thing. Once the first sides are printed I would then flip the pages over and reload them in the hopper to print the other side...
Really hoping this is possible, or this is going to be a long few days...

If I need 80 copies I change the number of copies in the print dialog box to 80. This is a basic windows printing dialog box so I'll pause here.

Maybe this will help to clarify my issue... Disregard how many copies I need to print for now. You're right in that the number of copies is easily changed, I know how to do that so no problem there.

For clarity let's say I only have a single 22 page booklet that I'd like to print. How do I set the print dialog settings on my printer so that the pages (I assume I would need 6 sheets for a 22 page booklet) print in the correct order on my non-duplex printer, keeping in mind that I have to manually reload the same six sheets of paper to print on the other side?

The main point here is that I am wondering if I need to stand in front of the printer to manually re-feed each page individually, or if all six sheets of paper in my booklet can print out at once and then be put back in the sheet feed so the other side of the same 6 sheets can be printed?

And with that in mind, can the same settings be used for ten booklets, i.e. 60 sheets of paper? Can I load 60 sheets of letter-size paper into the sheet feed, walk away for an hour to let the printer do its thing, and then come back to take the pile of printed sheets, turn the pile over and load it back into the sheet feed to print the other side?

Thanks, I'll give it a shot. I tried using the generic pdf print option in the dialog, but it messed with the layout a bit so I didn't think Publisher played well with the pdf format.
