I don't use iTunes myself so I don't know if there is an option to adjust the quality of ripped music, but Windows Media Player does have this ability. Just go Tools->Options->Rip Music, select MP3 from the drop-down menu, and then adjust the slider to change the quality setting. It has 4 presets: 128kbps (57MB), 192kbps (86MB), 256kbps (115MB), and 320kbps (144MB).

i use the I-Tunes software to extract songs from audio cds to mp3 format.these extrctions are done at 128kbps.
are there any softwares(free ones obviously) which can extract the songs at a higher bitrate?is there an option in Itunes to do something like that?
