Not only do the tracks you add appear in the Recently Added, they also appear in the Music part of the library.
You may not see them at first, it depends on how you have the Music Library viewed or sorted. Probably the easiest way is to click on the "Music" under the word Library and then choose List view from the menu bar or the icons at the top of the window.
Now click on the title of any of the columns. The library is sorted on that column. Click on Name.
All the tracks that you have in iTunes are now sorted in alphabetical order.
iTunes does not use "Folders", it uses "Playlists". Select "Music" in the left side bar and from there you can drag your tracks into the Non Language playlist that you created.

I buy a lot of old cd's bc they are cheaper than buying them on itunes store, and i have a hard copy just in case. when i add the cd's to my itunes, they automatically go into Recently Added. I have a folder titled "Non Language" that I would like to move them to, but I can't highlight and copy them. I looked in iTunes help, but obviously didn't get any help. Is there something simple that I'm missing?
