Making a playlist per artist.

I would like to make a playlist to include favorite songs from a single artist. For instance have a list for John Williams, and etc. Is this possible in iTunes? Thanks.

Very easy to do

In iTunes.
From the menubar choose File > New Smart Playlist
Select "Artist" > "Is" > "Name of the artist you want to be in the playlist"
Click the "+" button at the end of that line.
Enter the details for the second artist in the same way as the first one.
Continue until done.
Now click the drop down menu that currently says " Match ALL of the following rules" and change the ALL to ANY
Click OK and you are done.
You can rename the playlist to something more meaningful than "Untitled Playlist"
Smart Playlists can also be edited

To delete them

open the playlist, select the track you want to delete and hit the Delete Key.

This will remove the track from the playlist but NOT from your collection (Library)

Deleting from smart playlists?

I'm pretty sure you can't delete songs from a smart playlist, from memory. Another way to keep songs that you like by an artist on a smart playlist is by rating them. Assign a rating of say, 3 stars or above to songs you really like, and set that as a parameter in the smart playlist--ie, Rating is greater than 2 stars.
