JVC Everio Auto focus vs manual focus

I am a novice with an Everio GZ-MG335 and have been shooting at day & night time at short track Automobile races. This involves panning back and forth, passing past a catch fence/posts, light poles, etc, all the while filming a moving racecar. With the camera on auto focus, it seems to want to zoom on different things other than the cars only. When I tried to do a manual focus setting, I am not sure I was setting the focus correctly (directions seem vague), and when I viewed the video it was entirely out of focus the whole time. I really cant tell what the focus point is (shooting distance) when I try and set it manually. Where do I start to correct this problem. The Auto is too sensative to other things.
