Use Handbrake to tweak the movies into something suitable for iTunes, there are presets for all the Apple devices and some Android ones too.

I recently had my old video tapes of the family converted to digital files (MP4).
They play beautifully on VLC and on Quicktime.
However when I "add them to library" on my itunes account, and you try to open them... they show they are playing but just sit stuck at frame 1. I can scrub through the frames and see the video is there.. it just won't play no matter how many times I click the play / pause button.
Since we have 3 apple TV's and numerous ipads in our home that all use Home Sharing, I would like to keep those videos available in my iTunes library as well (as all my video files are stored on a RAID connected to my Mac Pro).
Any suggestions on WHY this is happening to only these MP4's? I have added other MP4's in the past with no issue.
