I'm not sure about what you want, because it seems that you want reverse enginering, but if you want a good free hexadecimal editor 'hackman hex editor', there is a free version and maybe with this you can see what you want on hex format.
There is another hex editor named xv132 wich is also very good.
The first one can be downloaded from internet looking for hackman.

Is there a way to decompile a file and read the contents to see what program specifically made the file, what version of that program? Or if multiple programs were used to make the file? For example you have a picture.jpg but you dont know what program was used originally and you'd like to know, is there a way to decompile the .jpg's or even documents?
