If you simply with to 'type with your voice,' Windows Vista and Windows 7 have voice recognition/dictation software built in; just look for it in the Start Menu and the Control Panel. As a third-party alternative, Dragon NaturallySpeaking is a high-quality product that comes highly recommended, despite not offering a trial version. It's available for both Windows and Mac users. If you require translation services, though, you're better off paying for third-party services on a per-document basis as computer translation is notoriously poor, particularly when combined with dictation software's occasional mistakes.
