The forms created with InfoPath 2003 SP-1 aren't compatible with the original InfoPath 2003. In particular if you use one of the new controls, or any of a dozen new features in InfoPath 2003 SP-1, the forms you create won't work with InfoPath 2003. You have to upgrade everybody in your organization to SP-1 before they can use the new forms. (Or, just as damning, you can restrict yourself to using the original InfoPath features only as you create new forms.)
Oy.
A warning: you have to manually remove InfoPath 2003 from your PC before you install InfoPath 2003 SP-1 Beta 1.
On the plus side, this Beta version should work on your PC even if you don't have InfoPath 2003 installed. If you've been thinking about downloading Microsoft's 30-day free trial version of InfoPath, fuhgeddaboutit. Get the SP-1 Beta 1 trial instead.
