I will assume OS 9.x.x in the absence of any other information.
This problem could be caused by at least three things.
1. Keyboard
2. Mouse
3. Corrupt OS.
To prove/disprove 1 or 2, borrow one and see if the problem occurs again. If it does then it is time for a clean install of the OS.
Keyboard/Mouse are fairly inexpensive but getting one with the correct ADB connector is getting a little more difficult. You really don't want to buy one just to test the theory. Borrowing is good.
If you added USB capabilities to the G3 then any USB keyboard and mouse will do the trick.

I have a 233 mhz processor G3 Beige model desktop, with a 40 gb hard drive and 320 megs of ram. I have a problem that starts when the computer is turned on. When I double click on an icon, it selects then unselects and I have to go to the FILE at top of screen to select open to get it to open. This always happens on start up, and then after a few times starts working with the double clicks again.
The other thing is my selected item sometimes stops on it's own by going back and forth between it and the last selected item when in AppleWorks 6.0.4. When it does that I can't do anything cause even if I select something, it continues to go back and forth between what I selected and the last thing selected. Could anyone let me know what is going on with my computer?
