1) Beef cheeks

2) Avoiding meat on the bone.

I have always read that this is "proper" meat (assuming that one eats the meat and not the bones!) as opposed to the minced up version (i.e. burgers) where bacteria can collect on the outside, then be minced up into the inside and maybe not killed off properly by cooking.

I know this latter is not to do with BSE but rather bacteria such as E coli.

Now I really am confused! I know I lose the plot quite often, but this one is now becoming way beyond my comprehension as to "the best thing to do".
