Go to Start, Run. Type in msconfig then click on Enter. Change Normal Startup to Selective Startup. Then uncheck the boxes of anything you don't want on startup menu. Click Apply and OK. Do NOT change back to Normal Startup. Leave the setting on selective.
Also, right click on anything showing on the startup on-screen menu, for the option to remove it.

If you are looking just to modify the XP start menu:

1)Go to the control panel

2)Click on the taskbar and start menu icon (in classic view)

3)There will be two tabs in the dialogue box that appears one says taskbar the other says start menu.

From here you can tell windows which icons you woul dlike to display on the start menu IE: If you would like to display the My Documents, network places, my pictures etc... icon or not.

I think this is what you were looking for?

Hi, another way is to right click on the taskbar, select properties and go to the "Start Menu" part, from there you can do remove the Documents folder and some other things.
Also, you can right click on the thing that you want to eliminate (if it is a simple entry) and click delete, you can even use drag & drop.

Thanks all six people who tried to help me to solve the problem. I was a new comer to computer and little dense to understand what all of you are telling me. With some difficulty I found a software called X-Setup and using the software I could get rid of ?Documents? from Classic Start menu, I did not want people to know where I visited by looking at Documents. It was easy to understand even to person like me. Thanks again to all who tried to help me.
