How to copy-paste data (iPhone -> iTunes)

Hi Team. Need your advice.
My laptop was crashed suddenly so I lost all info sitting in iTunes. However it's not that bad as I haven't been synchronizing my iPhone 5 for a long time with iTunes.

So I've got a new laptop and installed up to date version of iTunes. iPhone 5 + iOS 8 (just updated). Win 7x64.

How to copy-paste all data from iPhone to iTunes now ( all "as it is" from iPhone, w/o any looses)? Need all contacts, pictures+ video, apps, music, calendar, everything.

I worry to clear all iPhone data if something will be done not properly (especially contacts + picture + videos). I tried iTools - it doesn't recognize iPhone at all.

I rely on your help (maybe some step by step scenario)

Hi Bob, trick is that I don't sync my contact anywhere neither in Outlook not in Windows. Just keeping them in the phone. Maybe to secure contact it's better to sync them with Gmail? I'll check links you advised and will see however I hoped it will be easy to start with new Itunes setup ))

Current versions of Windows may not have any app to put the contacts into. This is why the question results in more questions.
