How do you change the Sync mail accounts in iTunes?

Can someone tell me how do you change the Sync accounts that show up on the info page for my iPod in iTunes? The one account listed is an email account that doesn't even exist on my iPod. I have no idea where it came from and it's not one I'm using with Outlook Express either.

Select the account with a click, tap delete?

"Mail account settings (email address, display name, server name, and
user name) are synced from the computer to the iOS device; iTunes does
not sync settings from the iOS device back to the computer and does not
sync any email messages."

Seems to be a click and the delete key.

Thanks, but how to I add accounts to iTunes so it will Sync with my iPod? The Outlook Express account it has listed isn't even one I use with Outlook Express any more. It's an old account from many years ago. The accounts that I do use with Outlook Express aren't even listed.

Here I had an Add Account button. Since you can't delete, it appears something has gone broke and I'll have to bow out. Let Apple explain this one.
