how do I recover doc and xls files converted to exe by virus

I am assuming that a virus converted the doc docx and xls files on my server to exe files. I've scanned all of the local desktops and haven't found a virus. all other type files were left intact. any suggestions?

First step. Identify the virus.

Since each virus did it differently the recovery changes with the infection. You could submit one of these .EXE files to say VIRUSTOTAL if you didn't find the pest.
