You can't. Depending on the edition you have (Home, Pro, Education, Enterprise) you can postpone updates for a certain period, but you can't disable them.
Chrome, moreover, is rather independent of Windows. So an issue with Internet Explorer or Bing is much more likely to be linked to an update by Microsoft than an issue with Chrome.
And even if uninstalling that particular update with you would help, it would leave your website inoperable for all visitors with Windows 10 using Chrome. That would be a sizeable part of your audience. So my advice is to solve this on your site, not on your PC, if it's related to Windows Update and the version of Chrome you run.
The first thing to do, however: check on another PC. If it's the same there, you know it's the same everywhere and it needs a change in the site. If it's working fine there, despite that Windows update, it's another issue with your PC. Then find and repair that.
