hi-def games for 360 and PS3

You hear a lot of talk about the hi-def resolution on games and DVD playback for the PS3 and 360 (optional). Does this mean that they will default to a 16:9 widescreen aspect ratio on your TV? I ask because I have an older Panasonic hi-def tube TV in the "square" 4:3 ratio that I use for gaming now. Of course all of my PS2 games fill up the whole screen, but if I watch TV on that set the hi-def channels are letterboxed top and bottom. Will the same thing happen with PS3 and 360 games? Is there such thing as hi-definition in 4:3 aspect ratio?
